This is traditional English/Irish gastro-pub fair. That said as Africans the kidneys were reserved for the women in the community and they probably grilled them.

We ‘devil’ our fresh lamb kidneys, by sauteing on high heat with mustard, chilis, Worcestershire sauce, and flambe with a splash of some whisky. Served on 1 whole wheat toast.
