This beef fillet salad makes a substantial dish and is perfect as a main on a hot day. I like to finish this salad differently based on what we've in the pantry; pan-fried potatoes, or halloumi or Jammy boiled eggs, a Thai-marinade for the beef. The dressing could be dijon mustard? Or Asian style. It's always a fun delicious surprise.
