Although I'm a huge advocate of local, its hard to resist a good piece of Salmon. Salmon is a wonderful rich fish especially if its wild caught or ethically farmed. We marinade this salmon with a honey, soy, ginger, mirin, lemon zest and bake it very delicately not to overcook it.
