It may seem old fashioned to start your meal with a soup but there's wisdom in the practice and this is such a comforting soup that hugs the tummy in all the right places. For our butternut soup we roast the butternuts whole and then stew them with a mirepoix and coconut milk making this soup vegan and vegetarian friendly. We use very little spices in this soup, letting the butternut flavor take over the dish.
